Comparación de glicerol y sorbitol como plastificantes en películas comestibles utilizando aislado de proteínas de suero lácteo (WPI)

Dentro del estudio de los films comestibles, es importante la influencia de los plastificantes en la matriz base de los mismos. Cuando estos son agregados en otros materiales, sufren cambios en las propiedades físicas y mecánicas del material. Por este motivo se estudió la influencia de glicerol y sorbitol como plastificantes en películas realizadas con aislado de proteínas de suero lácteo (WPI). Se compararon las propiedades mecánicas de tensión en tres relaciones de WPI/plastificante. Se obtuvo que los films realizados con sorbitol presentan mayores fuerzas y tensiones que los de glicerol, manteniéndose en ambos casos la tendencia de la disminución de las mismas con el aumento de plastificante. Los films que contienen glicerol como plastificante son más elásticos que los de sorbitol. Esto lo demuestran tanto las elongaciones como los módulos de Young presentados. En ambos casos la elasticidad aumenta con la mayor proporción de plastificante.
Abstract
It is known the very important influence that the platizicers have on the film´s matrix of biofilms. When the plastizicers are added to the matrix it goes through a lot of changes on its physical and mechanical properties. Because of this the influence of glycerol and sorbitol as plastizicers was studied on whey protein isolate (WPI) biofilms. The mechanical properties of biofilms were compared using three ratios of WPI/plastizicer. The films made with sorbitol had bigger forces and tensile strength than those with glycerol, and with both plastizicers the higher quantity of them led a lower force and tensile strength. The films made with glycerol as plastizicer are more elastic than the sorbitol ones. This was demonstrated by the percent elongation and by the elastic modulus. With both plastizicers the elasticity grows up with the more quantity of them.
